Here is the place where the philosophy of the perfect roasted coffee continues through tests and experiments. Paul is a worldwide awarded barista and has the concentration skills of a shaolin master. The most important elements in the coffee making process are water and the roasting of the coffee beans. Both have to be perfect. The rest is all about techniques and creativity. Paul and his team create a unique recipe for each different product. They work with modern machines that are capable of stabilizing the water temperature and the pressure of coffee extraction. They weigh each coffee dose and then they measure the coffee yield from the cup in order to deliver a constant taste quality.”

Counting only 20 square metres, Boiler Coffee Shop design & architecture project was developed by Attila KIM and Gabriel CHIS BULEA, a real challenge to blur the barriers between the client and the barista, but still, clearly, mark the meeting point between the two.

The interior architecture summarises the functional needs of both parts to the level of abstract models, which do not overlap perfectly where connected. The floors, the ceilings, the pieces of furniture of each side express their own identity, that in spite of the differences, connect in an architectural dialogue and allow fluid communication between the two. Santhé Fitoceainarie is a social economy structure (SES), set up by the General Social Assistance Directorate of the Municipality of Bucharest, created within a project with non-reimbursable financing within the Sectoral Operational Program Human Resources Development 2007-2013. The primary purpose of the project was to provide a professional qualification in the bartender-tea profession to a number of 28 people from disadvantaged groups and to provide 6 jobs for them.

Did you know that..

During the communist regime, in the ’80s, Romania was officially a caffeine-free country as it sought to reduce imports and coffee was one of those capitalist indulgences one can live without. A replacement drink was created from one-fifth decaf coffee, adding barley, oats, chickpeas, and chestnuts. Nicknamed Nechezol by Romanians, a word derived from the verb a necheza (to neigh), alluding to the oats (usually fed to horses), with the chemical suffix -ol giving a pseudoscientific touch alluding to Elena Ceaușescu, “world-renowned scientist”, wife of dictator Nicolae Ceaușescu. As a consequence, coffee trafficking could get one arrested, and it was a go-to charge used by authorities against activists or dissidents such as journalist Petre Mihai Bacanu, or writer Dan Desliu, who was placed under house arrest, facing charges of “illegal trafficking in coffee”, after granting an interview to the Voice America.
